CAST IRON CHICKEN TENDERLOIN + SWEET POTATO + ROASTED BROCCOLINI

A staple meal that is extremely easy to not only make but to bulk prepare that follows the basic principle of one primary protein source, one starchy complex carbohydrate source, and one fibrous vegetable.

INGREDIENTS:

  • 2+ lbs. Chicken Tenderloin

  • 3+ lbs. Sweet Potato

  • 3+ bunches of fresh Broccolini

  • Avocado Oil

  • Pink Himalayan Sea Salt

  • Black Peppercorn Grinder

  • Chili Powder

  • Goya Adobo

PREPARATION:

  1. Follow the instructions for preparing your sweet potato here.

  2. Follow the instructions for preparing your broccolini here.

  3. Follow the instructions for preparing your cast iron chicken tenderloin here, except substitute the seasonings for fresh ground black peppercorn, chili powder, and Goya Adobo.

BUILDING THE PLATE:

  1. Portion out your chicken. Aim for at least 150 grams

  2. Measure out 200 grams of the potato medley

  3. Load up on the broccolini! 150+ grams
